I was smoking some pork chops yesterday and I decided that I wanted something different that the same old BBQ Sauce or glaze. It occurred to me that since I moved here to Medford, Oregon, I haven't found any good Peruvian food. There might be some hiding somewhere but I haven't seen it yet. So I recreated one of my favorite sauces, Peruvian Aji Sauce. If you have eaten this, you know that it goes on everything! Meat, poultry, seafood, potatoes, rice, veggies and much more. I have yet to put it on something and say, "Nope. That doesn't work." So out of the goodness of my heart, I am going to share this recipe with you. Feel free to thank me later.
Peruvian Aji Sauce
6 large leaves romaine lettuce, torn up
½ bunch cilantro leaves
⅓ cup mayonnaise
2 jalapeños, seeded
3 cloves garlic, minced
2 tbsp lime juice
1 tsp kosher salt
Put it all in a blender. Blend until smooth. Taste and adjust salt.
Use on everything. If you look at the ingredients, you will notice that it is very Keto friendly. Make sure you read the label on the mayo you use. Way too many of them slip sugar into the mix. READ YOUR LABELS! I think you will find this is a great way to break the monotony of keto meal prep without affecting your carb intake.
