A new keto twist for classic Tex-Mex recipe. Nachos!
I am a fan of Nachos so I was little disappointed when I had to give them up for the Keto Lifestyle. But thanks to my BBQ Brother Ron Lewen, I now have a secret for replacing the chips. Mini Sweet Peppers! When you cut them in half they are perfect for holding all of your toppings and they still have that satisfying crunch. And for all my wimpy friends, don't worry they aren't spicy at all. Give this recipe a try and let me know what you think!
Keto Nachos Recipe
10 mini sweet peppers, cut in half and seeded
1 lb ground beef
1 small onion, chopped
1 tsp each:
Ground Chipotle Chile
1/2 cup water
1 cup shredded cheese, fiesta style Preparation: 1. Brown ground beef in a skillet. Pour off some of the fat. 2. Add onions and all the seasonings. 3. Stir and cook over medium heat until the onions soften. 4. Add water and stir, taking care to scrape all the brown bits on the bottom of the pan. 5. Cover and simmer for 10 minutes. 6. Arrange the peppers on a foil lined baking sheet. 7. Cover with the beef. 8. Top with the shredded cheese. 9. Broil until the cheese melts. It won't take long. Don't walk away from the broiler!
10. Add your favorite toppings and serve!
Toppings are your choice. I used Pork Belly (bacon), green onion, pico de gallo and sour cream but you do you! Here is a video showing the entire process!
