Am I right? Of course I am! Thank you! Thank you! I’m here all week. Jubilation is a dish that is made of ground beef, spicy tomato sauce and okra served over rice. I don't know if there is an origin for the name but I got the recipe from my mother. It could be hundreds of years old or it could just be something she made when we would say...
Since the weather is cooling off, I decided to break out this recipe and share it with you. It should take no more than 40 minutes to prepare if your prep work done.

The main reason people don't like okra is that it's slimy.
The reason it's slimy is that your Mama, your Grandmama, your Big Mama, and Aunt Bunny overcooked it. Give them a hug and a kiss from me and tell them they did it wrong. Okra shouldn't cook more than 15 minutes, even if it's frozen. When it’s cooked right, it should still have a little bite to it. If it's mushy, it's gonna be slimy. Let's get started with this recipe!
Jubilution Ingredients 1.5 lbs. ground beef
1 small onion, chopped
1 small bell pepper, chopped
3 cloves garlic, minced (you know if I say 3 I really mean 6, right?)
2 cans diced tomatoes, preferably fire-roasted
2 tsp sea salt
2 tsp black pepper
2 tsp granulated garlic (not powder)
2 tsp Italian Seasoning
1 tsp dark chili powder
1 tsp cayenne
1 tsp white pepper
1 cup frozen okra
2 cups cooked rice

Instructions: Brown the ground beef in a large pot or skillet. Remove the meat but save 2 TBSP of the remaining fat. Saute the onions and bell peppers in the fat until they are translucent (about 5 minutes). Add minced garlic and sprinkle in a little salt. Cook for another 30 seconds. Add diced tomatoes, including the juice, to the pot. Stir the ingredients, scraping the bottom of the pan as you go. Now add the rest of the seasonings, mix well and bring to a slow boil. Add the ground beef back in the mixture and stir. Reduce heat, cover, and simmer for 15 minutes. We're in the home stretch now. Add the frozen okra, stir and simmer for 15 more minutes. Now would be a great time to make your rice if you haven't done it already. This wouldn’t be a great time for an adult beverage. When the 15 minutes are up, remove from heat and let it sit for a couple of minutes. Stir and serve over rice.
