Cubano Breakfast Sandwich

I love Cubano sandwiches! The crispy rolls, the melty cheese, the porky goodness...this is very close to being the perfect sandwich. So I got to thinking, what if I made this into a breakfast sandwich? It would only take a few minor changes. Add some scrambled eggs. Switch the pickles for some carmelized onions for a little sweetness. Could it work? Let's find out!

Directions: Split a sandwich roll in half and schmear the outsides with mayonnaise. The mayo will give the bread a beautiful crispy crust. Put the bread on your sandwich press at 350 degrees. If you don't have a sandwich press, you can make this on a griddle or in a cast iron skillet. Add the shredded cheese on top of the bread and bring the lid down where it hovers above the cheese to start melting it. Once the cheese is melting, start adding the other items in order: ham, pulled pork, carmelized onions, scrambled eggs. Put the top of the bread on and bring the lid down to press the sandwich. If you are making it in a skillet or on a griddle, you can press it with a foil covered brick or another skillet on top. Ince it's done, cut it on the bias and serve. This sandwich turned out great!
