Bacon Fried Rice recipe


Most of my friends share my love/hate relationship with Bacon. We love to eat it and hate it when we don't have any. That's why we find so many ways to work it into our recipes. The first time I had Bacon Fried Rice was at a BBQ Brethren Bash. Our brother Ray, whom we affectionately call SilverFinger, brought this dish and impressed all. To this day, it is the only thing he is allowed to bring to any gathering. Oh yeah, beer. He can always bring beer. I could go on about how I created my version but I know most of you just came for the recipe so I will get to it,

Ingredients 1/2 pound of bacon, cut into 1/2" pieces 1 small onion, sliced 1 jalapeno, seeded and sliced 1 TBSP minced garlic 1 tsp minced ginger 1/4 head of cabbage, chopped 1/2 cup frozen peas and carrots 2 eggs, beaten 1 1/2 cups cooked rice 3 TBSP Soy Sauce 1 TBSP Oyster Sauce

Cook bacon in a hot wok until the fat renders and just getting crispy. Remove the bacon but leave the fat in the wok. Add the onions and jalapenos. When they begin to wilt, add the garlic and ginger. Stir for 30 seconds then add the cabbage. Cook for another minute then add the peas and carrots. Sprinkle on the black pepper and 1 TBSP of the Soy Sauce. Keep stirring. Add 1 TBSP of the Soy Sauce to the beaten egg and mix well. Add the rice to the wok and stir. Push everything to the sides of the wok and pour in the eggs and stir until they begin to set. Push everything back down in the middle and mix until it is combined. Add the last of the Soy Sauce and the oyster sauce in with the bacon and cook a few minutes more.
