Hey folx!

Sorry I haven't been here this past week. It's the time of year where we start catching up with friends and going to parties so I haven't been in the kitchen a lot.

I did start coming down with a head cold the other day and decided to make this quick pick me up. It's called Mexican chicken soup and it is really easy to make.

Here are the ingredients:

1 1/2 lbs. Chicken, cubed (You know I like thighs!) 2 qts. Chicken broth or water with chicken boullion added. 1 tbsp garlic powder Salt and Pepper to taste.

2 cups cooked white rice

1 red onion, chopped 1 large tomato, diced 1 bunch cilantro, chopped 4 jalapenos, minced (I use serranos because I like it extra hot!) 1 large avocado, cubed

Put the 1st 4 ingredients in a pot. Bring to a boil then lower heat and simmer 15 minutes. Adjust seasoning.

Put a big scoop of rice in a soup bowl. Ladle the soup over the rice. Add the last five ingredients without cooking. Sit down and eat.

This is a fresh and healthy meal.

Little know fact: There is more vitamin c in a jalapeno then there is in an orange. So eat chiles for your health!
