Ok. The doctors and our Moms say we need to eat more veggies. Most of us would rather have some meat or something sweet. This is a dish that you will enjoy and it will make Mom proud of you. Greens and cabbage will provide lots of fiber and vitamin A. Healthy Stuff. Hmph. I just like it. Here are the ingredients:

1 Bag Greens, cleaned and cut (Collards, Mustard or Turnip greens all work fine) 1 small head of cabbage, coarsely chopped 1 onion, chopped 2 tbsp garlic minced 1 tbsp Olive oil 1 smoked ham hock (A smoked turkey leg or wing works well also.) 1/4 cup Apple cider vinegar 2 tbsp Kosher salt 1 tbsp black pepper 1 tbsp ground cayenne pepper

In the bottom of a stock pot or dutch oven, saute the onion and garlic in the olive oil until it is translucent (almost see thru). Add hot water to the pot until it is half full. Add the ham hock and bring the water to a boil. Lower heat to medium low and simmer for 20 minutes.

Add the rest of the ingredients to the pot, stir well and cover. Don't worry about it being over stuffed. The veggies will cook down quickly. Simmer for another 20 minutes, stirring occasionally.

Serve in a bowl with the all of the the juice. Southerners call this "pot likker" and if it is done right, it's the best part of the dish. A lot of the vitamins cook out into this liquid and some people drink just the "likker" for cold and sore throats. Try it and let me know what you think!
