Talk about an easy dinner! MrsMista gets a hankering for one of my omelets every now and then and I love it because I get to creative and it doesn't require any special ingredients. You can make it with what ever you have in the house. Here's what I came up with last night.


3 strips of turkey bacon (it's all we had on hand.) 1 big handful of spinach (washed and big stems removed) 1/2 large onion, sliced 2 tsp olive oil 8 eggs 1/4 cup milk Salt & black pepper 1 tbsp butter & 1 tbsp olive oil 2 roma tomatoes, sliced 1/8 lb. each cheddar and jack cheese, grated

Fry the bacon until crispy (not burnt) in a cast iron skillet. Remove and roughly chop the bacon. Add the onion, spinach and olive oil to the skillet and saute until they are wilted. Remove from skillet. Give the skillet a quick rinse and wipe with a paper towel.

Beat the eggs in a bowl. Heat the skillet and add the butter and olive oil. Add the milk, salt and pepper to the eggs and beat a little more. The butter should be melted by now. Pour the eggs into the skillet and stir them well then let them sit for a minute. Use the spatula to pull the cooked parts towards the middle and let the still liquid parts fill in. Add the spinach, onion and bacon back to the skillet amd mix them in.

When the botton is done and the top is still moist, put the skillet under the broiler for a minute or two until the top solidifies. Remove from broiler and put the tomato slices on top of the omelet. Cover with cheese and put it back in the broiler until the cheese melts.

This is a very hearty meal for two people.
