This is the next entry from my catered Christmas Party. Today we are cooking Brandied Sweet Potato Casserole. This is a bit different from the same old candied yams that most folks serve for Christmas. I think you will enjoy it! Here are the ingredients:
4 large yams (It's almost impossible to find sweet potatoes. Or is it the other way around?) 1/2 stick of melted butter 1/2 cup brown sugar 1/4 cup brandy 1 tsp salt 1 tsp cinnamon 1 tsp nutmeg (fresh ground if you can get it) 1 tsp allspice
Poke hole in the yams with a fork and place in a baking dish. Bake 1 hour at 350 degrees. Take the potatoes out and let them cool a bit. Peel the yams (should be very easy to do) and put the flesh in to a large mixing bowl. Mash the yams with a potato masher or a wire whisk. add therest of the ingredients and mix well. Put the mixture into a casserole or baking dishand smooth out the top with a spoon. Put the dish in the oven and bake at 350 degrees until it heated all the way through and the edges start to brown. Remove from oven. Eat.
My father taught me how to make this dish and it is now a staple in our holiday meals.
